We started making mayonnaise in 1986, Roger, a local chef making his own mayonnaise started selling his mayonnaise to other local chefs for their restuarants and it went so well that he gave up the restaurant trade and started mayonnaise production full time.
Roger's son Paul has now taken over as our head chef and is behind most of the delightful dips, sauces, dressings and mayonnaises that we make. We make everything in small batches to ensure the end consumer has the freshest product to our own exacting standards.

This is one of our favourite shows of the year, surrounded by the beautifully manicured West Dean Gardens there is a stall for everything there is to know, taste and wear about Chillis. We'll be there selling our spiciest sauces and look forward to seeing you there.
